It really does take time for an employee to get acclimated. Usually, you can't just leave them off to themselves and expect they will know what to do. Temp agencies specialize in people who can jump in without so much hand holding.

You have to have a written plan that employees can review. Then they should shadow another employee for a day or so to get an idea of the flow of the business day, and procedures in practice.
